Emu Chili Cheese Egg Omelette (6 Servings)

1 Emu Egg
2 Chicken eggs (optional)
1 Can Dennison's Chili with meat (your choice of spiciness)
1 Sweet Onion, Chopped
1/2 Cup Cheddar Cheese, Grated

Scramble the Emu egg and optional chicken eggs in medium bowl. Season the eggs with your favorite seasonings, i.e. salt, garlic salt, pepper, etc. Place scrambled eggs in large skillet and cook over medium low heat. While your egg is cooking, in a small saucepan, heat Chili on medium high heat for 4 minutes. Next, take onion and chop it and ready it for the frying pan with eggs. Then when chili is bubbling hot pour into saucepan on eggs with half of the cheese. Keep checking the frying side of egg as to not brown it too dark. Put a lid on the frying pan to provide a more efficient way of cooking both sides of the egg. Then fold egg in half and put the remaining cheese on top. Remove from heat, turn off stove. Let egg rest for one minute before serving. Enjoy!
